Zucchini Fries
  • 2 medium medium zucchinis Look for firm ones with fewer seeds.
  • 1 cup breadcrumbs or gluten-free panko Use panko for a crunchier texture.
  • ½ cup grated Parmesan cheese For added flavor.
  • 2 large eggs Beaten for the egg wash.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste Adjust based on preference.
  • Cooking spray or olive oil For greasing the baking sheet.

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and trim the ends of the zucchinis. Cut each zucchini into thin, fry-like strips or wedges.
  3. In a bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini strip into the egg wash and then roll it in the breadcrumb mixture until well coated.
  6. Place the coated zucchini fries in a single layer on a greased baking sheet, ensuring they aren’t overcrowded.
Cooking
  1. Spray the tops lightly with cooking spray or drizzle a bit of olive oil.
  2. Bake for about 20-25 minutes or until golden brown and crispy, flipping halfway through.
  3. Allow them to cool slightly before serving with your favorite low-carb dipping sauce.

Notes

For added flavors, consider mixing dried herbs into the breadcrumb mix. An air fryer can produce remarkably crispy fries with less oil.
