  • 1 large watermelon Look for one that’s ripe and firm.
  • 1 cup coconut yogurt Or Greek yogurt for a non-vegan option.
  • 1/2 cup strawberries, sliced in half
  • 1/2 cup raspberries
  • 1/2 cup cherries, pitted and halved
  • 1/2 cup blueberries
  • 1/2 cup pomegranate seeds
  • to taste Honey or maple syrup Optional for drizzling on top.

Method
 

Preparation
  1. Cut the watermelon into thick, round slices about 1-2 inches each. You will use these as your pizza crust.
  2. Use a spatula or the back of a spoon to spread a layer of coconut or Greek yogurt over each watermelon slice.
  3. Scatter the sliced strawberries, blueberries, raspberries, cherries, and pomegranate seeds over the yogurt.
  4. If desired, lightly drizzle honey or maple syrup over the toppings.
  5. Using a sharp knife, cut the adorned watermelon slices into pizza-like wedges.
  6. Serve immediately for the best texture.

Notes

Wrap any unused watermelon slices with plastic wrap to keep them fresh. Store them in the fridge for up to 1-2 days, though toppings may lose texture over time. Avoid using overripe watermelon for better texture.
