- Cut the watermelon into thick, round slices about 1-2 inches each. You will use these as your pizza crust.
- Use a spatula or the back of a spoon to spread a layer of coconut or Greek yogurt over each watermelon slice.
- Scatter the sliced strawberries, blueberries, raspberries, cherries, and pomegranate seeds over the yogurt.
- If desired, lightly drizzle honey or maple syrup over the toppings.
- Using a sharp knife, cut the adorned watermelon slices into pizza-like wedges.
- Serve immediately for the best texture.
Notes
Wrap any unused watermelon slices with plastic wrap to keep them fresh. Store them in the fridge for up to 1-2 days, though toppings may lose texture over time. Avoid using overripe watermelon for better texture.
