Ingredients
  

For the Sushi Rice
  • 1 cup sushi rice Rinsed until water runs clear.
  • 1.25 cups water For cooking the sushi rice.
  • 1 tablespoon rice vinegar For seasoning the rice.
  • 1 tablespoon soy sauce For seasoning the rice.
For the Filling
  • 1 cup edamame, shelled Steamed or boiled until tender.
  • 1 small cucumber, sliced For a refreshing crunch.
  • 1 medium carrot, julienned For easy eating.
  • 0.5 medium bell pepper, sliced Adds color and flavor.
  • 1 medium avocado, sliced For creaminess.
  • to taste sesame seeds For garnish.
  • optional pickled ginger For additional flavor.

Method
 

Cooking the Sushi Rice
  1. Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a small pot and bring to a boil.
  2. Once boiling, reduce to a simmer, cover, and cook for about 20 minutes or until the water is absorbed.
  3. Remove from heat and let it sit for 10 minutes.
Seasoning the Rice
  1. In a small bowl, mix the rice vinegar with soy sauce. Once the rice has cooled slightly, drizzle this mixture over the rice and fold it gently with a spatula.
Preparing the Vegetables
  1. While the rice is cooling, wash and chop your vegetables. The cucumber and bell pepper should be sliced thinly, while the carrot should be julienned for easy eating.
Preparing the Edamame
  1. If using frozen edamame, steam or boil them until tender, about 5 minutes. Drain and set aside.
Assembling the Box
  1. Start with a layer of sushi rice at the base of your bento box.
  2. Arrange the edamame, cucumber, carrot, bell pepper, and avocado in separate compartments or on top of the rice.
Garnishing and Storing
  1. Finish with a sprinkling of sesame seeds and add pickled ginger for an extra burst of flavor.
  2. If you’re not eating it right away, ensure your bento box is sealed properly.

Notes

For best results, aim for a balance of flavors and textures. This dish is visually appealing, so play with colors and shapes. Consider adding marinated tofu for additional protein.
