Preparation
- Cook and dice your sweet potatoes, steaming or boiling until soft. Allow to cool.
- In a food processor, blend the cooked sweet potatoes, coconut cream, maple syrup, coconut sugar, and cinnamon until smooth and creamy.
- In a separate bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the cane sugar until stiff peaks are achieved.
- Carefully fold the sweet potato mixture into the whipped egg whites, retaining the airiness.
- Transfer the mousse to serving dishes and refrigerate for at least 2 hours.
- Serve chilled, garnished with cinnamon or whipped coconut cream.
Notes
For best results, use high-quality organic ingredients. Experiment with flavors such as nutmeg or vanilla. Avoid omitting the chilling step for perfect texture.
