For the Mousse
  • 3 cups diced cooked sweet potatoes Cook until soft.
  • 14 oz coconut cream (use the solid part) Use the solid cream from the can.
  • 1/3 cup maple syrup Natural sweetener.
  • 2 tbsp coconut sugar Adds caramel notes.
  • 1.5 tsp cinnamon Enhances the flavor.
  • 4 large egg whites Whipped for light texture.
  • 1/4 tsp cream of tartar Helps stabilize egg whites.
  • 3 tbsp cane sugar To sweeten the egg whites.

Method
 

Preparation
  1. Cook and dice your sweet potatoes, steaming or boiling until soft. Allow to cool.
  2. In a food processor, blend the cooked sweet potatoes, coconut cream, maple syrup, coconut sugar, and cinnamon until smooth and creamy.
  3. In a separate bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the cane sugar until stiff peaks are achieved.
  4. Carefully fold the sweet potato mixture into the whipped egg whites, retaining the airiness.
  5. Transfer the mousse to serving dishes and refrigerate for at least 2 hours.
  6. Serve chilled, garnished with cinnamon or whipped coconut cream.

Notes

For best results, use high-quality organic ingredients. Experiment with flavors such as nutmeg or vanilla. Avoid omitting the chilling step for perfect texture.
