Preparation
- Preheat your oven to 375°F (190°C).
- Clean the portobello mushrooms with a damp cloth to remove any dirt and gently remove the stems.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
- Add the chopped spinach and cook until wilted, about 3–4 minutes. Remove from heat.
- In a bowl, combine the sautéed spinach, ricotta cheese, mozzarella cheese, grated Parmesan, salt, pepper, and Italian seasoning. Mix well until fully combined.
Baking
- Place the mushroom caps on a baking sheet. Generously fill each mushroom cap with the spinach and cheese mixture.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly and golden.
