Ingredients

  • 2 tablespoons Ras el Hanout North African spice blend
  • 1/4 cup olive oil Extra virgin is recommended
  • 2 cloves garlic, minced Freshly minced for better flavor

For the Lamb Chops
  • 8 pieces lamb chops (preferably rib chops) Adjust quantity based on serving needs

Method
 

Marinate the Lamb Chops
  1. In a bowl, mix Ras el Hanout, olive oil, minced garlic, lemon juice, salt, and pepper until well blended.
  2. Place the lamb chops in a resealable bag or shallow dish and pour the marinade over them, ensuring all sides are well-coated.
  3. Seal the bag or cover the dish, and let the lamb marinate in the refrigerator for at least 2 hours, or ideally overnight.
Prepare for Grilling
  1. Heat your gas or charcoal grill to medium-high heat.
  2. Make sure the grill grates are clean and well-oiled to prevent sticking.
Grilling the Lamb Chops
  1. Take the marinated lamb chops out of the refrigerator and let them sit at room temperature for about 15 minutes.
  2. Place the lamb chops on the grill and grill for about 4-5 minutes on one side until nicely browned.
  3. Turn the chops over and grill for another 4-5 minutes for medium-rare or longer if desired.
  4. Use a meat thermometer to check the internal temperature (145°F for medium-rare).
  5. Remove the lamb chops from the grill and let them rest for about 5 minutes.

Notes

Serve garnished with fresh herbs and pair with sides like couscous, grilled vegetables, or a zesty salad. Drizzle with a yogurt sauce for added flavor. Avoid over-marinating to prevent a mushy texture and ensure proper grill temperature for even cooking.
