Preparation
- Wash the cucumbers thoroughly; keep the skins on for added crunch.
- Smash each cucumber with the flat side of a knife or a rolling pin, then cut into bite-sized pieces.
Prepare the Dressing
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, minced garlic, and chili oil. Adjust seasoning to taste.
Combine
- In a large bowl, combine the smashed cucumber pieces with the dressing and mix well. Allow to marinate for about 10 minutes.
Garnish and Serve
- Sprinkle sesame seeds and chopped green onions on top before serving.
Notes
Best enjoyed fresh, store leftovers in an airtight container in the fridge for up to two days. Add the dressing just before serving if meal prepping.
