  • 4 cups Heirloom or Roma tomatoes Sliced in half
  • 2 cloves Fresh garlic Minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 2 tablespoons Balsamic vinegar For drizzling
  • 8 ounces Creamy burrata cheese Torn into pieces for serving
  • 1 cup Fresh basil For garnish
  • 2 tablespoons Olive oil For drizzling and roasting

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the tomatoes and slice them in half. Arrange them cut-side up on a baking sheet.
Seasoning
  1. Drizzle the tomatoes with olive oil and sprinkle with minced garlic, dried herbs, salt, and pepper.
  2. Pour a touch of balsamic vinegar over the tomatoes.
Roasting
  1. Place the baking sheet in the oven and roast for about 25-30 minutes, or until the tomatoes are tender and their skins begin to blister.
Assembly
  1. Once out of the oven, allow the tomatoes to cool slightly. Arrange them on a serving platter and tear the burrata, placing it generously among them.
Garnishing
  1. Garnish with torn basil leaves and drizzle with additional balsamic vinegar or sprinkle with sea salt if desired.

Notes

Consider experimenting with other soft cheeses or adding toasted pine nuts for texture. Marinating the tomatoes ahead of time deepens their flavor.
