Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, combine whole-grain oats, chia seeds, flaxseeds, salt, and baking powder.
  3. In another bowl, mix together the peanut butter, maple syrup, and vanilla extract until well-blended.
  4. Gradually add the dry ingredients into the wet mixture, stirring until it forms a thick dough.
Baking
  1. Using a tablespoon or cookie scoop, place the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for about 10-12 minutes or until lightly golden brown. Let cool before serving.

Notes

Try adding chocolate chips, dried fruits, or nuts for extra flavor. Store cookies in an airtight container for up to a week.
