  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1/4 cup warm water
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup dark chocolate, chopped
  • 1/2 teaspoon espresso powder
  • 1/2 teaspoon vanilla extract
  • 1 each egg (for egg wash)

Method
 

Preparation
  1. Activate the yeast by combining warm water with yeast and a pinch of sugar in a small bowl. Let sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together flour, sugar, salt, cocoa powder, and espresso powder.
  3. In another bowl, mix the heavy cream, activated yeast mixture, and vanilla extract. Pour the wet mixture into the well of the dry ingredients.
  4. Combine everything until a dough forms and then knead on a floured surface for 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a warm cloth, and let rise for about 1 hour, until it doubles in size.
  6. Chop the dark chocolate into small pieces for the filling.
Baking
  1. Roll out the risen dough on a floured surface into a rectangle about 1/4 inch thick.
  2. Sprinkle the chopped chocolate evenly over the rolled-out dough.
  3. Roll the dough tightly from one edge into a log. Slice the log into 1-2 inch wide chunks.
  4. Place the rolls on a parchment-lined baking tray, cover, and let rise for another 30 minutes.
  5. Preheat your oven to 375°F (190°C). Brush the tops of the rolls with a beaten egg and bake for 20-25 minutes until puffed and golden brown.
  6. Let the rolls cool slightly before serving.
