Dressing Ingredients

Preparation
  1. Dice the avocados, chop the red onion and cilantro, and prepare the corn.
  2. If using canned corn, drain and rinse it.
Making the Dressing
  1. In a small bowl, combine lime juice, honey, salt, and pepper. Whisk until smooth.
Combining the Salad
  1. In a large bowl, mix the diced avocados, corn, red onion, and cilantro.
  2. Drizzle the honey-lime dressing over the salad.
  3. Gently toss using a spatula or wooden spoon to combine without mashing the avocados.
Serving
  1. Taste the salad and adjust the lime juice or seasoning to your preference.
  2. Serve immediately or chill for 30 minutes to meld flavors.

Notes

For variations, consider adding black beans, jalapeños, queso fresco, or tropical fruits like mango or pineapple. Store leftovers in an airtight container for up to 24 hours. To prevent avocados from browning, cover the surface of the salad with plastic wrap before sealing the container.
