  • 1 cup black beans, rinsed and drained
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/4 cup natural peanut butter or almond butter
  • 1/4 cup oats Can be substituted with almond flour for a fudgier texture.
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • to taste splash Water Add as needed for desired consistency.

Method
 

Preparation
  1. In a food processor, combine the black beans, cocoa powder, honey or maple syrup, peanut butter, oats, vanilla extract, salt, and baking powder. Blend until smooth. You may need to add a splash of water for a creamier consistency.
  2. Once blended, taste the batter and adjust sweetness or cocoa if necessary.
  3. Transfer the batter to a bowl or container and chill in the refrigerator for about 30 minutes to firm up.
Serving
  1. Enjoy it straight from the bowl, spread it on toast, or use it as a dip for fruits like apple slices or strawberries.

Notes

This Healthy Protein Brownie Batter can be stored in an airtight container in the fridge for up to a week. You can also freeze portions in ice cube trays for later enjoyment.
