  • 1 tsp baking powder Ensure freshness for best results.
  • 1/2 tsp baking soda Ensure freshness for best results.
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup Greek yogurt Adds protein.
  • 1/3 cup sugar or honey For sweetness.
  • 1/2 cup milk
  • 1 large egg
  • 1/2 tsp vanilla extract For flavor.
Main Ingredients
  • 1 cup fresh or frozen blueberries If using frozen, toss in a bit of flour before adding.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together Greek yogurt, sugar or honey, milk, egg, and vanilla extract until smooth.
  3. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  5. Gently fold in the blueberries.
  6. Line a baking sheet with parchment paper.
  7. Using a spoon or cookie scoop, place mounds of the batter onto the baking sheet, spacing them apart.
  8. Bake for about 15-20 minutes, or until golden and a toothpick comes out clean.
  9. Cool for a few minutes before serving.

Notes

For variety, add a pinch of cinnamon or nutmeg. Serve with yogurt dip or syrup.
