  • 2 pieces ripe peaches, sliced Choose freestone peaches for easier slicing.
  • 8 oz burrata cheese Can substitute with fresh mozzarella or goat cheese.
  • 2 cups fresh basil leaves Can substitute with mint or arugula.
  • 2 tablespoons olive oil Add just before serving to avoid sogginess.
  • to taste Salt and pepper Enhances sweetness of peaches.
  • to taste balsamic glaze (optional) For added flavor.

Method
 

Preparation
  1. Slice ripe peaches into thin wedges.
  2. On a large serving platter, place the burrata cheese in the center and gently tear it open.
  3. Surround the burrata with the sliced peaches.
  4. Tuck fresh basil leaves around the peaches and burrata.
  5. Drizzle olive oil, and sprinkle with salt and pepper to taste. Optionally, drizzle with balsamic glaze.
  6. Serve immediately while the peaches are fresh and the cheese is creamy.

Notes

For a crunch, consider adding toasted nuts like pecans or walnuts. If you have leftovers, store them in an airtight container in the refrigerator, but consume within a day or two for optimal taste.
