Ingredients
  

Base ingredients
  • 1 tablespoon olive oil For sautéing
  • 1 large onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
Vegetables
  • 1 medium zucchini, diced
  • 2 cups spinach Fresh or frozen
  • 1 can diced tomatoes With juice
Liquids
  • 4 cups vegetable broth
Seasonings
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook until the vegetables are soft, about 5–7 minutes.
  3. Stir in the minced garlic and cook for an additional 1–2 minutes, until fragrant.
Cooking
  1. Toss in the diced zucchini, spinach, and the can of diced tomatoes (with juice). Stir everything together.
  2. Add the vegetable broth to the pot and stir well to combine all ingredients. Bring to a gentle boil.
  3. Sprinkle in the dried basil, oregano, salt, and pepper to taste. Adjust according to flavor preferences.
  4. Reduce the heat and let the soup simmer for about 20–30 minutes.
Serving
  1. Taste and adjust seasonings if needed. Serve hot, with crusty bread for dipping.

Notes

For a creamy texture, blend a portion of the soup after cooking. You can also incorporate beans, lentils, chicken, or quinoa for additional protein and nutrition.
