Method
 

Preparation
  1. Wash and thinly slice the cucumber to about 1/8 inch thick.
  2. Spread a generous layer of cream cheese on one side of each slice of bread.
  3. Place a single layer of cucumber on one of the cream cheese-covered slices and sprinkle with salt and pepper.
  4. Top with another cream cheese-covered slice of bread, cream cheese side down.
  5. Trim off the crusts for a refined appearance or cut into quarters or triangles.
  6. Chill for about 30 minutes before serving.

Notes

Avoid soggy cucumbers by patting them dry. Refrigerate leftovers in an airtight container for up to 24 hours.
