Main Ingredients
  • 1 pound ground beef Use lean ground beef for a lighter soup.
  • 1 can (15 oz) black beans Drained and rinsed.
  • 1 can (15 oz) kidney beans Drained and rinsed.
  • 1 can (15 oz) corn Drained.
  • 1 can (14.5 oz) diced tomatoes Undrained.
  • 1 cup beef broth
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • to taste Salt and pepper Adjust according to preference.
Optional Ingredients
  • to taste jalapeƱos For added heat.
  • to taste zucchini For additional vegetables.
  • to taste fresh cilantro For garnish.

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain off any excess fat.
  2. Transfer the browned beef to your crockpot.
  3. Add the black beans, kidney beans, corn, diced tomatoes, beef broth, chopped onion, chopped bell pepper, garlic powder, chili powder, and season with salt and pepper.
  4. Stir everything together until well mixed.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  2. When ready, give your soup a good stir before serving.

Notes

For a vegetarian version, substitute ground beef with additional beans and vegetables. Consider adding corn tortillas for a southwestern twist or cream cheese for a creamy texture.
