- In a large pot, boil salted water and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- While the pasta cooks, season the chicken breast generously with salt, pepper, and Cajun spice mix.
Cooking
- In a large skillet over medium heat, add olive oil. Once hot, add the seasoned chicken and cook for about 5-7 minutes per side or until cooked through. Remove from skillet and let it rest before slicing.
- In the same skillet, add more oil if needed, then sauté the minced garlic until fragrant (about 30 seconds).
- Pour in heavy cream, bring to a gentle simmer, and stir in Parmesan cheese until melted and smooth.
- Add cooked pasta, sliced chicken, and a bit of reserved pasta water to the skillet. Toss until well combined.
- Adjust the consistency with more pasta water if needed. Add optional ingredients like spinach or bell peppers to wilt slightly.
Serving
- Plate the creamy Cajun chicken pasta, garnish with extra Parmesan cheese and a sprinkle of Cajun seasoning, if desired.
