Preparation
- Rinse the cranberries and peel the oranges. Zest and juice the oranges, keeping both parts aside.
Cooking
- In a medium saucepan, combine the cranberries, orange zest, orange juice, and about ½ cup of water. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes or until the cranberries burst and soften.
- Mash the mixture and stir in your choice of sweetener. Taste and adjust as preferred.
Blending
- Remove the mixture from heat and let it cool slightly. Use a blender or food processor to puree it until smooth.
Drying
- Spread the pureed mixture evenly onto a dehydrator sheet or a lined baking sheet, about ¼ inch thick.
- If using a dehydrator, set it at 135°F and dry for 4-6 hours. If using an oven, preheat to the lowest setting (around 150°F) and leave the door ajar to help with airflow. Check every hour until the leather is no longer sticky.
Cooling and Cutting
- Once fully dried, let the leather cool. Cut it into strips or squares, rolling them up for easy snacking.
Notes
Store in an airtight container or wrap in plastic wrap. For extra freshness, refrigerate or freeze for long-term storage.
