  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • Seasonings of choice (e.g., garlic powder, onion powder, herbs) Customize with your favorite spices.

Preparation
  1. In a large mixing bowl, combine the cottage cheese and the egg. Stir until well blended, then add in your chosen seasonings.
  2. In a separate bowl, combine the flour, salt, and baking powder. Mix them thoroughly to ensure even distribution.
  3. Gradually add the dry ingredients to the wet ingredients. Use a spatula to fold everything together until it forms a soft dough. If the dough feels too sticky, add a little more flour.
  4. Lightly dust your work surface with flour. Transfer the dough onto the surface and gently knead it for about 1-2 minutes until it becomes smooth.
  5. Divide the dough into equal portions (depending on how many flatbreads you want). Roll each portion into a flat circle about 1/4 inch thick.
Cooking
  1. Heat a non-stick skillet over medium heat. Lightly grease if necessary.
  2. Place a flatbread in the skillet and cook for 2-3 minutes on one side, then flip and cook for another 1-2 minutes until golden brown.
  3. Remove from the skillet and keep warm while you cook the remaining pieces. Serve fresh with your favorite toppings.

Notes

Store any leftover flatbread in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving. For freezing, layer them with parchment paper and store in an airtight bag.
