  • 2 pieces ripe bananas, mashed The riper the bananas, the better the flavor.
  • 1/2 cup sugar Granulated sugar for sweetness.
  • 1/4 cup butter, melted
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Plus additional for topping.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
Topping Ingredients
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour For the topping.
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with butter.
  2. In a mixing bowl, mash the bananas thoroughly. Add in the melted butter, sugar, egg, and vanilla extract. Stir until everything is well combined.
  3. In another bowl, whisk together 1 cup of flour, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Avoid overmixing for a lighter muffin texture. Then, fold in the sour cream until fully incorporated.
  5. In a small bowl, combine the brown sugar, 1/4 cup of flour, and cinnamon for the topping.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the topping generously over each muffin.
  7. Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack. Serve warm.

Notes

For the best flavor, use very ripe bananas. Store the muffins in an airtight container at room temperature for up to three days or freeze them for up to three months. Always reheat before serving for optimal enjoyment.
