Ingredients
  

Salad Components
  • 1 cup quinoa Rinsed before cooking.
  • 2 cups water or vegetable broth Use vegetable broth for extra flavor.
  • 1 medium butternut squash, peeled and diced
  • 2 cups spinach or kale Fresh, for added nutrients.
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped Can be toasted for added flavor.
  • 1/4 cup red onion, finely chopped For a mild onion flavor.
Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup Use pure maple syrup for best flavor.
  • 1 tablespoon apple cider vinegar
  • to taste salt and pepper Adjust to preference.

Method
 

Preparation
  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes.
  3. Set the quinoa aside to cool once cooked.
Roasting
  1. Preheat your oven to 400°F (200°C).
  2. Spread the diced butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast for 25-30 minutes or until tender and slightly caramelized.
Combining
  1. In a small bowl, whisk together the maple syrup, apple cider vinegar, and a pinch of salt.
  2. In a large bowl, toss together the cooked quinoa, roasted butternut squash, spinach or kale, dried cranberries, chopped pecans, and red onion.
  3. Drizzle the prepared dressing over the salad and mix well.
Finishing Touches
  1. Taste the salad and adjust the seasoning by adding more salt or vinegar as needed.
  2. Serve the salad warm, at room temperature, or chilled.

Notes

This salad is perfect for meal prep. Store in an airtight container in the refrigerator for up to four days. Add greens just before serving to maintain their crunch.
