Preparation
  1. Rinse the rice under cold running water to remove excess starch.
  2. In a medium saucepan, bring 2 cups of water to a rolling boil.
Cooking
  1. Add the rinsed rice to the boiling water. Bring it back to a boil, then reduce the heat to low, cover, and let it simmer for about 18-20 minutes.
  2. Once the rice is tender, stir in the corn kernels.
  3. Add the butter, salt, and pepper. Stir until the butter is melted and everything is combined.

  1. Transfer the buttered corn rice to a serving bowl, garnishing with chopped parsley or cilantro if desired.
