Ingredients
  

Main ingredients
  • 3 cups broccoli florets Chopped into bite-sized pieces
  • 1 can chickpeas Rinsed and drained
  • 1 cup bell peppers Sliced
Seasonings
  • 2 tablespoons soy sauce For seasoning
  • 2 cloves garlic Minced
  • 1 tablespoon ginger Fresh, minced
Optional add-ins
  • 1 cup carrots Sliced thinly
  • 1 teaspoon red pepper flakes For additional heat
  • 2 tablespoons toasted sesame seeds For garnish

Method
 

Preparation
  1. Chop the broccoli into bite-sized florets and slice the bell peppers.
  2. If you’re using carrots, slice them thinly.
  3. Rinse the canned chickpeas under cold water.
Cooking
  1. In a large pan or wok, heat a tablespoon of oil over medium heat.
  2. Sauté minced garlic and ginger for about 30 seconds until fragrant.
  3. Add the broccoli and bell peppers. Stir-fry for around 4-5 minutes until the broccoli is vibrant green and just tender.
  4. Stir in the rinsed chickpeas and continue cooking for another 2-3 minutes.
  5. Drizzle soy sauce over the stir fry. Stir everything to combine and heat through.
  6. If desired, sprinkle on toasted sesame seeds and red pepper flakes.
  7. Serve immediately and enjoy!

Notes

For best results, prep all ingredients beforehand. Use sesame oil for a unique flavor twist and avoid overcooking the vegetables for a crunchy texture.
