Preparation
- Chop the broccoli into bite-sized florets and slice the bell peppers.
- If you’re using carrots, slice them thinly.
- Rinse the canned chickpeas under cold water.
Cooking
- In a large pan or wok, heat a tablespoon of oil over medium heat.
- Sauté minced garlic and ginger for about 30 seconds until fragrant.
- Add the broccoli and bell peppers. Stir-fry for around 4-5 minutes until the broccoli is vibrant green and just tender.
- Stir in the rinsed chickpeas and continue cooking for another 2-3 minutes.
- Drizzle soy sauce over the stir fry. Stir everything to combine and heat through.
- If desired, sprinkle on toasted sesame seeds and red pepper flakes.
- Serve immediately and enjoy!
Notes
For best results, prep all ingredients beforehand. Use sesame oil for a unique flavor twist and avoid overcooking the vegetables for a crunchy texture.
