  • 12 ounces 12 ounces (4 cups) bow tie pasta, dry
  • 2 cups 2 cups cherry tomatoes, halved
  • 1/4 cup 1/4 cup red onion, diced
  • 1 cup 1 cup bocconcini cheese, halved
  • 1 cup 1 cup spinach, packed and finely chopped
  • 1/2 cup 1/2 cup basil, finely chopped
Dressing
  • 3 tablespoons 3 tablespoons pesto
  • 2 tablespoons 2 tablespoons olive oil
  • 1/2 lemon 1/2 lemon, juiced
  • Salt and black pepper, to taste

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil and add the bow tie pasta. Cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
Combining Ingredients
  1. In a large mixing bowl, add the cooked pasta, cherry tomatoes, red onion, bocconcini cheese, spinach, and basil.
Preparing the Dressing
  1. In a small bowl, whisk together the pesto, olive oil, lemon juice, salt, and black pepper.
Mixing the Salad
  1. Pour the dressing over the pasta mixture and toss gently until all ingredients are well coated.
Adjusting Seasoning and Chilling
