Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar
  • 0.25 teaspoons salt
For the Cheesecake Filling
  • 3 packages cream cheese, softened 8 ounces each
  • 1 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cups sour cream
  • 1 cups fresh blueberries plus extra for topping

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, sugar, and salt.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan, making it as even as possible.
  4. Bake the crust for about 10 minutes or until lightly golden. Remove it and let it cool.
Make the Filling
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  2. Gradually add sugar and vanilla, mixing until combined.
  3. Beat in eggs, one at a time, ensuring each one is well blended before adding the next.
  4. Mix in sour cream and gently fold in blueberries, reserving some for topping.
Bake the Cheesecake
  1. Pour the cream cheese mixture over the cooled crust in the springform pan.
  2. Bake for 50 to 60 minutes or until the edges are set and the center slightly jiggles. Avoid over-baking.
  3. Turn off the oven and crack the door open, letting the cheesecake cool for an hour. Refrigerate for at least 4 hours or overnight.
Serve
  1. Top your cheesecake with the reserved blueberries.
  2. Release the sides of the springform pan, slice, and serve your delicious blueberry cheesecake.

Notes

Ensure cream cheese and eggs are at room temperature for smoother batter. Avoid overmixing and bake in a water bath if possible to prevent cracks. Experiment with toppings like blueberry sauce or whipped cream.
